Roasted Potatoes and Carrots

Looking for an easy, yummy and filling side for dinner? Try out these roasted potatoes and carrots. They are a family favorite!

 

What you'll need:
* 5-6 med size russet potatoes
*4 large carrots
*1 vidalia onion
*3 cloves of garlic
*2 tablespoons Olive Oil
* 1/2 tsp dried basil
*1/2 tsp sea salt
*1/4 tsp black pepper

Steps:
1. Preheat oven to 425*
2. Give Carrots and Potatoes a good scrub in the sink
3. Peel Carrots and cut in 1/2
4. Cut potatoes in 1/4ths
5. Peel and cut garlic cloves
6. Slice onion in 1/8ths
7. Throw all veggies in a large bowl, and toss with the Olive oil, Basil, Salt and Pepper. 

8. After all veggies are evenly coated, place on a baking sheet, and bake for 35 mins or until potatoes are tender. 
9. Remove from oven, and place in a serving dish. 


I usually pair these with grilled chicken, but today I paired it with some delicious grilled pork chops!
